WHAT WŁOSZCZYZNA [‘SOUP GREENS’] WAS AND IS, WHAT IT IS CALLED BY THE RESIDENTS OF CRACOW AND THE HIGHLANDERS – OR A SCIENTIFICALLY- DECORATED JUBILEE BUNCH OF VEGETABLES
The article is a lexical study dedicated to the word włoszczyzna [‘soup-greens’]. It presents, firstly, the time and reasons for the emergence of this word in Polish. Particular attention was given to the meaning of ‘vegetables from Italy’, described in the context of different Italian names of vegetables borrowed into Polish, and then to the semantic development of this word in the following centuries which resulted in the contemporary understanding of the term as ‘vegetables used for soup, including chicken broth’. To this end, the paper traces the changing components of włoszczyzna, i.e. it describes the vegetables that were included in it, and indicated the probable reasons for semantic transformations. Secondly, the paper highlights other regional names for a mix of soup vegetables, focusing in particular on Lesser Polish names such as jarzyna and jarzynka. In the analysis utilizes historical dictionaries and lexicons of general Polish, materials from old cookbooks, as well as dialectal and regional dictionaries from southern Poland.
